  • 2 firm carrots
  • 1 medium onion
  • 2 celery stalks
  • 3–4 garlic cloves
  • 4 cups low-sodium vegetable broth
  • 1 can diced tomatoes
  • Salt, pepper, thyme, bay leaves

Instructions

  1. Wash and chop all vegetables: cabbage into bite-sized pieces, carrots and celery into small chunks, onion finely chopped, and garlic minced.
  2. In a large pot over medium heat, add olive oil. Saut? the onion until translucent (about 5 minutes), then add minced garlic and cook until fragrant (about 1 minute).
  3. Stir in diced carrots and celery; cook until softened (3-4 minutes).
  4. Add chopped cabbage, canned tomatoes, and vegetable broth; mix well.
  5. Season with salt, pepper, thyme, and bay leaves. Bring to a boil then reduce to simmer for about 30 minutes.
  6. Taste before serving; adjust seasonings as needed. Remove bay leaves before serving.
