- 2 cups fresh cherries (pitted)
- 4 oz goat cheese (crumbled)
- 4 cups mixed greens (washed)
- 1/2 cup walnuts (toasted)
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- Pinch of salt
Instructions
- Preheat oven to 375?F (190?C) and line a baking sheet with parchment paper.
- Spread cherries on the baking sheet, drizzle with olive oil, sprinkle with salt, and roast for 15-20 minutes until slightly caramelized.
- While cherries roast, rinse and dry mixed greens in a large bowl.
- Toast walnuts in a pan over medium heat for about 5 minutes until golden brown.
- Add roasted cherries and crumbled goat cheese to the bowl of greens.
- Drizzle balsamic vinegar and olive oil over the salad; gently toss and serve immediately.
