- 4 cups water or vegetable broth
- 2 cups fresh spinach, chopped

- 3 garlic cloves, minced
- 1-inch piece of ginger, minced
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp chili powder (adjust to taste)
- Salt to taste
- Juice of half a lemon
Instructions
- Rinse the red lentils under cold water until clear. Chop the spinach and prepare onions, garlic, and ginger.
- In a large pot over medium heat, heat oil and add cumin seeds until they sizzle. Add onions and saut? until translucent (about 5 minutes).
- Stir in minced garlic and ginger along with turmeric and chili powder; cook for another minute until fragrant.
- Add rinsed lentils and water/broth; bring to a boil then reduce heat to simmer uncovered for about 20 minutes.
- Once lentils are soft, stir in chopped spinach; cook until wilted (about 5 minutes). Blend half for creaminess if desired.
- Season with salt and lemon juice before serving hot with rice or naan.
