Perfect for family dinners or cozy nights in, these customizable spuds can be topped to your liking, making them a versatile dish for any occasion. Ingredients

Scale
  • 4 large Russet potatoes
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup bacon bits (optional)
  • 1/4 cup chopped chives or green onions

Instructions

  1. Preheat oven to 400?F (200?C). Scrub potatoes under cold water and pat dry.
  2. Bake potatoes directly on the oven rack for 45-60 minutes until tender when pierced.
  3. Let cool slightly, then cut in half lengthwise and scoop out insides into a bowl, leaving enough potato in skins for stability.
  4. Mix potato flesh with butter, cream, cheese, bacon bits (if using), salt, and pepper until creamy.
  5. Spoon mixture back into potato skins and top with extra cheese if desired. Bake again for 15-20 minutes until heated through and golden.
  6. Garnish with chives or green onions before serving.
