Ingredients
- 1 cup green or brown lentils
- 1 cup chopped walnuts
- 1 cup finely diced celery
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 tsp dried thyme
- 2 tsp dried sage
- 4 cups low-sodium vegetable broth
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse lentils under cold water until clear. Chop onion, celery, garlic, and walnuts.
- In a medium pot, bring vegetable broth to a boil. Add lentils, reduce heat to simmer, cover, and cook for 20-25 minutes until tender.
- In a large skillet over medium heat, heat olive oil. Saut? onion and celery for about 5 minutes until soft; add garlic and cook until fragrant.
- Combine cooked lentils with saut?ed veggies in a bowl. Add chopped walnuts and dried herbs; mix well.
