- 1 medium spaghetti squash (about 3 pounds)
- 1 pound large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 4 tablespoons unsalted butter
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon red pepper flakes
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 400?F (200?C). Cut the spaghetti squash in half lengthwise and remove seeds. Drizzle with olive oil, salt, and pepper. Place cut-side down on a baking sheet and roast for 30-40 minutes until tender.
- In a large skillet over medium heat, melt butter. Add garlic and red pepper flakes; saut? until fragrant (about 1 minute). Add shrimp and cook until pink and opaque (3-5 minutes).
- Remove shrimp from skillet; add lemon juice to deglaze the pan. Return shrimp to skillet and mix well.
- Once spaghetti squash is done roasting, flip it over and scrape out strands with a fork into a bowl. Pour shrimp mixture over squash.
- Garnish with parsley before serving.
