  • 1 lb lean ground beef or turkey
  • 1 cup cauliflower rice
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1 cup low-sugar tomato sauce

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Cut the tops off the bell peppers and remove seeds, placing them upright in the dish.
  3. In a skillet over medium heat, brown the ground meat until fully cooked; drain excess fat.
  4. Stir in cauliflower rice, spices, half of the shredded cheese, and tomato sauce until well combined.
  5. Spoon the mixture into each bell pepper until slightly overflowing.
  6. Cover with foil and bake for 30 minutes, then uncover and sprinkle remaining cheese on top. Bake for an additional 10-15 minutes until bubbly.
