- 4 large bell peppers (any color)
- 1 lb lean ground beef or turkey
- 1 cup cauliflower rice

- 1 tsp onion powder
- 1 tsp Italian seasoning
- 1 cup low-sugar tomato sauce
Instructions
- Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- Cut the tops off the bell peppers and remove seeds, placing them upright in the dish.
- In a skillet over medium heat, brown the ground meat until fully cooked; drain excess fat.
- Stir in cauliflower rice, spices, half of the shredded cheese, and tomato sauce until well combined.
- Spoon the mixture into each bell pepper until slightly overflowing.
- Cover with foil and bake for 30 minutes, then uncover and sprinkle remaining cheese on top. Bake for an additional 10-15 minutes until bubbly.
