- 4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced

- 1/2 cup Kalamata olives, pitted

- 1/3 cup extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon dried oregano

- 1. Preheat your grill or skillet over medium-high heat. Season chicken breasts with salt, pepper, and olive oil. Cook for 6?7 minutes per side until the internal temperature reaches 165?F (75?C). Remove from heat and let cool before chopping into bite-sized pieces.
- 2. While the chicken cools, chop cherry tomatoes, cucumber, red onion, and Kalamata olives into small pieces.
