  • 1 cup bell peppers, thinly sliced
  • 1 cup carrots, julienned
  • 1 cup cucumbers, julienned
  • 1/2 cup fresh mint leaves

  • 1 cup cooked shrimp or tofu (chopped)
  • 1/2 cup creamy peanut butter
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 1 tbsp honey or maple syrup

Instructions

  1. Prepare the vegetables and protein by slicing them into thin strips.
  2. In a bowl, mix the peanut butter, soy sauce, lime juice, and honey until smooth.
  3. Soften each rice paper wrapper in warm water for about five seconds.
