- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 medium Yukon Gold or Russet potatoes
- 1 cup ranch dressing
- 2 cups shredded cheddar cheese
- 4 green onions, thinly sliced
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 400?F (200?C) and lightly grease a baking dish with nonstick spray.
- Cut the chicken breasts into bite-sized pieces and season with salt, pepper, garlic powder, and paprika.
- Peel and slice the potatoes into thin rounds.
- In the greased baking dish, layer half of the potato slices at the bottom. Add half of the seasoned chicken on top, followed by half of the ranch dressing. Repeat layers.
- Pour remaining ranch dressing over the top and sprinkle shredded cheddar cheese generously.
- Cover with foil and bake for 45 minutes. Remove foil during the last 10 minutes to achieve a golden crust.
