  2. Remove from heat, stir in lemon juice or vinegar, and let sit for 5-10 minutes until curds form.
  3. Line a fine-mesh strainer with cheesecloth over a bowl, pour in curds to separate from whey, and drain for 10-15 minutes.
  4. Rinse the curds under cold water, transfer to a bowl, sprinkle with salt, and mix gently.
  5. Refrigerate for at least an hour before serving.
