  • 1 medium head cauliflower (about 4 cups chopped)
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 2 tablespoons curry powder
  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tablespoons lemon juice

Instructions
