Ingredients

  • 1 lb fresh clams, scrubbed
  • 3 medium potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 1 stalk celery, finely chopped
  • 1 cup heavy cream
  • 4 slices bacon, chopped
  • 1 tsp fresh thyme (or ? tsp dried)
  • 4 cups low-sodium chicken broth

Instructions

  1. Rinse clams under cold water. Prepare the potatoes, onion, and celery.
  2. In a large pot over medium heat, cook bacon until crispy. Remove bacon and drain on paper towels.
  3. Saut? onion and celery in the bacon fat until soft (about 5 minutes). Add diced potatoes.
  4. Pour in chicken broth and add clams. Simmer for 15 minutes or until potatoes are tender.
