  • 1 medium onion, chopped (about 150g)
  • 3 cloves garlic, minced
  • 4 cups vegetable stock (1 liter)
  • 1 cup heavy cream (240ml)
  • 6 oz Stilton cheese, crumbled (170g)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your veggies: Wash broccoli and chop into small florets.
  2. Saut? aromatics: In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add broccoli: Incorporate the chopped broccoli into the pot along with vegetable stock. Bring to a boil, then reduce heat and simmer for about 10 minutes until broccoli is tender.
