  • 2 cups canned white beans (cannellini or great northern)
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, chopped
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Saut? onion, carrots, and celery until softened (about 5 minutes). Add garlic and cook for another minute.
  2. Stir in white beans and combine well.
  3. Pour in vegetable broth along with thyme and rosemary. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Add spinach and cook until wilted (about 2 minutes). Season with salt and pepper.
  5. Use an immersion blender to blend the soup until smooth but leave some chunks for texture.
  6. Serve hot with a drizzle of olive oil or fresh herbs.
