Description

Crock Pot Lasagna Soup is the ultimate comfort food that combines all the flavors of classic lasagna in a warm, hearty soup.


Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 28 oz canned diced tomatoes (with juices)
  • 4 cups low-sodium chicken broth
  • 8 oz lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 tsp Italian seasoning

Instructions

  1. In a skillet over medium heat, brown the ground meat until fully cooked; drain excess fat.
  2. Add chopped onion and minced garlic to the skillet; sauté until softened (about 5 minutes).
  3. Transfer meat mixture to the crock pot; add diced tomatoes, chicken broth, and Italian seasoning; stir well.
  4. Break lasagna noodles into bite-sized pieces; add to the crock pot and mix.
  5. Cook on low for 4 hours or high for 2 hours until noodles are tender.
  6. Stir in ricotta cheese and half of the mozzarella just before serving; top with remaining mozzarella.
