- 1 lb ground beef or Italian sausage
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 28 oz canned diced tomatoes (with juices)
- 4 cups low-sodium chicken broth
- 8 oz lasagna noodles, broken into pieces
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- 2 tsp Italian seasoning
Instructions
- In a skillet over medium heat, brown the ground meat until fully cooked; drain excess fat.
- Add chopped onion and minced garlic to the skillet; sauté until softened (about 5 minutes).
- Transfer meat mixture to the crock pot; add diced tomatoes, chicken broth, and Italian seasoning; stir well.
- Break lasagna noodles into bite-sized pieces; add to the crock pot and mix.
- Cook on low for 4 hours or high for 2 hours until noodles are tender.
- Stir in ricotta cheese and half of the mozzarella just before serving; top with remaining mozzarella.
