Ingredients
- 1 cup long-grain rice (Basmati or Jasmine)
- 2 cups low-sodium vegetable broth
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1 tsp dried thyme
- 1 bay leaf
- 2 tbsp olive oil
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, heat olive oil over medium heat and saut? onions until soft (about 5 minutes). Add garlic and cook for an additional minute.
- Stir in the rinsed rice and toast for 2 minutes.
- Pour in the vegetable broth, add thyme and bay leaf, bring to a gentle boil. Then reduce heat to low and cover.
- Cook for 15-20 minutes until liquid is absorbed. Let sit covered for an additional 5 minutes.
- Fluff with a fork and fold in mixed vegetables before serving warm.
