  • 1 cup wild rice blend
  • 1 medium onion, diced
  • 2 cloves fresh garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup sour cream (full-fat for richer flavor)
  • 1 cup shredded cheddar cheese (or Monterey Jack)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350?F (175?C). Lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Cook the wild rice according to package instructions (about 45 minutes).
  3. In a skillet over medium heat, saut? diced onion in olive oil until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  4. In a large bowl, combine cooked rice, saut?ed onions and garlic, diced raw chicken breasts, chicken broth, sour cream, salt, and pepper. Mix well.
  5. Transfer the mixture to the prepared baking dish and top with shredded cheese. Cover with foil and bake for 30 minutes.
  6. Remove foil and bake for another 15-20 minutes until cheese is bubbly and golden brown. Let cool slightly before serving.
