- 1 ? cups Bomba or Calasparra rice
- 4 cups chicken broth
- 1 tsp saffron threads
- 2 tbsp extra virgin olive oil
- 2 bone-in chicken thighs
- 4 oz chorizo sausage (sliced)
- 8 oz shrimp (peeled and deveined)
- 8 oz mussels (cleaned)
- 1 red bell pepper (diced)
- 1 green bell pepper (diced)
- Salt and pepper to taste
Instructions
- Rinse the rice under cold water until clear. Heat olive oil in a large paella pan over medium heat. Season chicken with salt and pepper; saut? until golden brown, then remove from the pan.
- In the same pan, add chorizo and cook until crispy. Add diced bell peppers and saut? until softened.
- Stir in rinsed rice and saffron dissolved in warm water until well coated.
- Pour in chicken broth; bring to a simmer. Return chicken to the pan without stirring to develop a crispy bottom (socarrat).
- After about 15 minutes, add shrimp and mussels on top; cover until mussels open, about 5 more minutes.
- Serve hot directly from the pan with lemon wedges for an added zing.
