  • 4 medium ripe Roma tomatoes (about 500g)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp balsamic vinegar
  • 2 tbsp fresh basil or thyme, chopped

Instructions

  1. Preheat the grill to medium-high heat.
  2. Wash the tomatoes and slice them in half lengthwise. Remove seeds if desired.
  3. In a bowl, mix olive oil, salt, and pepper. Brush this mixture over each tomato half.
  4. Place the cut-side down on the grill and cook for 4-5 minutes until charred.
  5. Carefully flip the tomatoes and drizzle with balsamic vinegar. Grill for another 3-4 minutes until softened but still firm.
  6. Remove from heat and sprinkle with fresh herbs before serving warm.
