- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup BBQ sauce
- 3 medium sweet potatoes (about 1.5 lbs), peeled and diced
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp paprika
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the diced sweet potatoes in olive oil, salt, pepper, and paprika. Spread them on one side of the baking sheet.
- Season the chicken breasts with salt and pepper on both sides and place them on the other side of the baking sheet.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and sweet potatoes are fork-tender.
- In the last five minutes of cooking, coat the chicken with BBQ sauce and return to the oven.
- Once done, let the chicken rest before slicing it into pieces. Serve by layering sweet potatoes in bowls topped with sliced chicken and extra BBQ sauce.
