Instructions

  • Pour the wet ingredients into the dry mixture and stir gently until just combined; do not overmix.
  • Spoon the batter into the muffin tins until about three-quarters full.
  • Bake for approximately 20-25 minutes or until golden brown and a toothpick comes out clean.

Notes

For added flavor, consider mixing in shredded coconut or raisins.
